Garlic Soup

1 head whole unpeeled garlic
1 small onion – slicked
1 leek – white only – sliced
olive oil
1 potato sliced
1 quart veg broth
2 T cream
salt and pepper
red pepper – julienned

roast head garlic – 325 for 45 min (or until golden brown and tender) sauté onion, leek in olive oil (soft not brown). Add garlic potato and veg broth. Cover and simmer 1 hour. Add crea. Puree (blender) and strain. Sprinkle with red pepper – also can make garlic chips chips to garnish also. Think sliced and fried in oil.
