Sweet Potato Pie

Crust – pie shells
2 cups mashed yams
1T butter
2 eggs
1 cup evap milk
¾ cup firmly packed brown sugar
½ cup light corn syrup
1t vanilla
½ t ground ginger
½ t cinnamon
½ t grated nutmeg
½ t salt
1 ½ cup chopped pecans (for topping)
can top with whipped cream

mix butter into sweet potato. Beat eggs add to mixture. Add evap milk, brown sugar, corn syrup, vanilla, ginger, cinnamon, nutmeg and salt. Pour into pie shells. Sprinkle with pecans. Bake 35-45 at 375.

Double recipe, yields 3 pie shells
