Rugalach

Preheat oven to 350

2 sticks butter, softened
2 cups flour
1 cup vanilla ice cream
current jelly
chopped walnuts, raisins (or currants, dried cherries), cinnamon,
jam of your choice

Combine butter and flour. Beat in ice cream. Divide into 4 sections. Wrap in parchment or wax paper. Refrigerate until firm (about 1 hour)

On floured surface, roll out one section. Make a rectangle – cookie wafer thin.

Reflour surface. You can turn dough over to east flattering. Spread with jam, sprinkle with cinnamon, raisins and mix. Roll up length wise like a jelly roll. Transfer to foil lined cookie sheet. Make diagonal slits along surface ¾ way down (indicates pieces) about ¾ inch apart.

Repeat process with remaining sections. Bake about 45 mins to 1 hour until golden. Cool 5 mins then cut each piece all the way thru.
